I didn't know exactly where the brisket was, so I looked for a beef chart in GOOGLE. What a mess, none of the charts are the same as to where the different cuts start and stop and several had extra names stuck in places where the lines had been moved around. I did find the exact chart this file was made from, or at least one that looked the same. Some had the brisket just going from the back of the front leg around the front of the animal to the same place on the other side, BUT others had the brisket extending back past what would be the middle of the animal measured from front to back. I guess there is no standard etched in stone as to where the lines are drawn or even what to call each section.gcw8 wrote:I believe the brisket is in the wrong place
